Did you know you can enjoy your favourite pancakes without worrying about gluten and sugars?
This quick and easy recipe with only 3 ingredients offers a delicious and healthy alternative for wholesome breakfast or dessert:
INGREDIENTS:
4 large organic or free-range eggs (Mooberry Farms brand)
4 ripe organic Bananas (Nature’s Heritage brand)
3 tablespoons Health Riot Cassava Flour
2-3 tablespoon of Crede Organic Virgin Coconut Oil
Paw Paw, strawberries, blueberries or other fresh fruits for decoration
2-3 tablespoons Mooberry Farms Double Thick Plain Yogurt
PREPARATION:
Peel and chop Bananas in large pieces and put them in a blender/ food processor or mixer.
Add all eggs and blend for a minute until mixture is smooth.
Add Cassava flour spoon by spoon and blend for another minute or two.
Heat a non-stick frying pan with ½ teaspoon Coconut oil.
Spoon some of the pancake dough, fry for about a minute and flip to the other side.
Fry all pancakes one or more at a time depending on the size of your pan.
The dose makes 9-10 pancakes (+-10cm diameter)
Arrange with fresh berries, paw paw, yogurt and Stonelodge Goji & Ginger Granola (optional).
