Overindulgence during Festive season is a common issue for everyone. This quick salad recipe will add fiber to boost your metabolism and lots of vitamins and proteins to keep you full. It makes a healthy meal and is great idea for lunch-boxes.

SPINACH & MANGO SUMMER SALAD WITH AVO AND STEAK 

If you feel like something green and fresh, but have leftover meat from the New Year eve celebration or a big party, this salad will keep you full and provide lots of vitamins, fiber and both plant and animal protein.

The salad can be made the night before.  Steak can be substituted with chicken or other meat or boiled eggs.

Ingredients:

1/2 packet Baby Spinach (300g)
1 Roman Lettice
1 ripe mango
2 tablespoons Health Connection Raw Sunflower seeds
2 tablespoons Health Connection Raw Pumpkin Seeds
2 tablespoons Absolute Organix High Oleic Sunflower oil or Blue Sky Organic Extra Virgin Olive Oil
2 tablespoons Good Life Organic Balsamic Vinegar
Good Life Himalayan salt
1 steak (cooked and sliced)
1 avocado

Preparation:

Wash and cut Baby Spinach and Roman Lettuce. Peel and cut mango into small cubes.

In a deep bowl put the greens, mango and seeds. Add oils, salt and balsamic vinegar and mix with your hands. Cover and let it stay in the fridge until ready to serve.

Split the salad in 2 smaller bowls, add sliced avocado and steak and serve.
